In spring, enjoy Kyoto's bamboo shoots; in summer, young sweetfish; in autumn, matsutake mushrooms; and in winter, crab and pufferfish, allowing you to experience the seasonal delicacies of Japan.
The dashi used in the cooking is made from genuine kombu from Hokkaido, katsuobushi from Kagoshima, and carefully selected water.
We cook rice that has been freshly milled that day using carefully selected water in a Shigaraki pottery rice cooker. We prepare freshly cooked rice for each serving.
Recommended hidden sake from Japan - from famous sake to be paired with dishes, served at your discretion. Half a go 1000 to 2000, one go 1500 to 4000. *Prices may vary depending on the ingredients.
