We use the finest domestic natural tiger puffer fish. Deadline for accepting reservations is 2:00 p.m. 3 days prior to the event.
The chef recommends this course using seasonal ingredients imported from all over Japan. The rice is Koshihikari produced in Minamiuonuma, Niigata.
This course of dishes is prepared with the ingredients of the season and of the season, and is full of originality and ingenuity.
