Chonmage Beer is primarily brewed as an upper fermentation type seeking aroma and richness. Based on beers with distinctive colors and aromas made in various European countries, it adds its own unique personality while adhering to the purity law of beer, using only water, hops, malt, and yeast as ingredients. It is particular about the selection of just four types of ingredients, closely monitoring the quality trends of malt and hops each year, resulting in a fruity aroma, a rich and mellow taste, and a very fine and beautiful creamy foam. It has been finished to have a soft and smooth mouthfeel.
Characterized by a deep flavor harmoniously brought about by the yamahai brewing method, it pairs well with unique and rustic dishes. It can be enjoyed at temperatures suited to the season or personal preference; when chilled, it offers a sharp and refreshing umami and acidity, while warming it brings out the mellow sweetness and acidity it inherently possesses.
Only the white grapes that have grown in the ideal state of Muku are carefully selected. By delaying the harvest period and allowing them to over-ripen for a month, the grapes are bathed in the brilliant sunlight, causing their skins to change to a beautiful golden brown and increasing the sweetness of the fruit. 'Muku' is a sweet and fruit-rich white wine made from these late-harvest grapes. Each sip will evoke a sense of happiness, as if you are experiencing a dream that never ends.
