Hidetaka Takahashi is a chef from Hokkaido, with extensive experience and knowledge, and his skill in making the most of local ingredients is remarkable. After training in Tokyo and Kyoto, he opened Juzan in 2010. His cuisine, which combines tradition and innovation, continues to captivate many customers.
