The representative grape variety essential for chacoli production, 'Ondarrabi Zuri', is said to have been named after the town of Hondarribia, which was a prominent production area. The winemaker is Ana Martin, whose wines have won numerous awards. This is a lightly sparkling type with a pale greenish-yellow color. You can enjoy a variety of ripe aromas such as tropical fruits like apple, grapefruit, and pineapple. It has a well-balanced moderate acidity and bitterness, with fruity aromas that linger long on the palate. Perfect as an aperitif.
Basque Dry (Ondarrabi Zuri) The Irlsta Chacolina, which expresses a style that respects tradition with refined modern techniques, is enjoyed in many Michelin-starred restaurants. It is made by combining Ondarrabi Zuri and Ondarrabi Beltza using the Senia method, the most commonly used winemaking technique for rosé wine. It has a transparent pale salmon pink color. Rich aromas of raspberries, cranberries, and blackberries charmingly spread. There is also a refreshing citrus-like quality, along with a pleasant texture. The pure and refined elegant taste is enhanced by a moderate richness and plumpness derived from black grapes.
