After finishing the shabu-shabu, use the broth to cook spiny lobster, kinmedai scraps, and vegetables for a luxurious hot pot. The hairy crab's body, claws, and shell are boiled and served as is.
Using a stone pot, we will shabu shabu the Kinki fish caught by single hook from Abashiri with our special sauce. Enjoy it with ponzu sauce. After shabu shabu, please also enjoy the hot pot with Kinki fish scraps and vegetables. It is exquisite and melts in your mouth. We highly recommend you try it at least once! This is a legendary flounder. It is also known as 'Takanoh' because its fins resemble the feathers of a hawk. Additionally, it is used in the Hokkaido Shiranuka specialty shiso shochu 'Tantaka', and is referred to as 'Tantaka' in the Ainu language for Matsukawa. The flesh has a firm texture and sweetness.
