As a soba restaurant that has been in business for over 20 years in Gifu, we take pride in our homemade noodles. Our soba is made in-house, which makes a difference in its firmness, aroma, texture, and smoothness. The soba broth, which is the lifeblood of a soba shop, is made from Hokkaido kelp and three types of fish flakes, combined with a secret golden soba dipping sauce that has been aged in a jar with soy sauce. It is our proud specialty.
The handmade fried tofu is simmered to a slightly sweet and spicy flavor, perfectly complementing the secret soba dipping sauce. The tempura scraps are specially made for the chilled tanuki at the store.
Using freshly harvested mushrooms from our own farm, the thick and meaty shiitake mushrooms are carefully grown by us. The large and aromatic shiitake mushrooms provide a richer umami flavor when made into tempura. You can enjoy them generously dipped in soba broth or with tempura dipping sauce. It's the best dish!
