The restaurant's nature-inspired interior is so relaxing that you may forget the time. From the flat counter, you can enjoy the artistry of the owner's cooking. The course is a culmination of his passion. We would like to share our sushi and Japanese cuisine, which is truly delicious, with the world! With this in mind, we take the time to carefully prepare each and every ingredient. The appetizer is a dish arranged according to the four seasons. The inside of the cutlet is extremely rare and the batter is crispy, and it is served with fragrant wasabi. The salad of wild vegetables is served with Egoma oil and Japanese herring roe. The 10 pieces of nigiri are generously infused with Edo-mae work, and seafood carefully selected from the Toyosu market is used throughout. The seared nodoguro is carefully selected so that it drips with fat, and the fluffy conger eel is finished off with a savory finish using binchotan charcoal. To top off the meal, the owner himself prepares handmade soba noodles. The broth slowly simmered from the abalone and the brown sugar is rich, and if you pour in the soba water, you will enjoy a blissful moment with the aroma of the sea. The sweet aftertaste after the meal is the fresh straw-robin rice cake. The rice cake is made with real warabi powder and finished just before serving. Homemade gelato is served along with the still steamy strawbimochi. The thick gelato and warm strawbimochi melt in your mouth in an instant.
