Sweet potato shochu distilled under reduced pressure using 'Kagoshima Aroma Yeast No. 1'. It features a 'donburi brewing' method where rice malt and sweet potatoes are prepared simultaneously, resulting in a high concentration of components that lead to a banana-like aroma.
This sweet potato shochu is brewed using a black koji base and the golden Senkan variety, distilled under normal pressure. It is finished using only the new sake from the first year, characterized by the refined aroma of high-quality steamed sweet potatoes and the pure flavor of sweet potatoes, along with a sophisticated sweetness and lingering finish.
