We generously used carefully selected bluefin tuna. It is finished as a luxurious dish with added salmon roe and sea urchin.
When it comes to squid, the Sumi Ika has a crisp texture. It is enjoyed with yuzu and salt from Aguni Island in Okinawa Prefecture (the type of squid may change depending on the season).
Enjoy clams from Kujukuri, Chiba Prefecture with a dipping sauce. It pairs exceptionally well with orange wine (the origin may change depending on the season).
