Nishisake Brewery has established a system where all aspects are carefully managed by having contracted farmers in the prefecture grow the sweet potatoes and rice. Satsuma Hoizan was brewed in commemoration of this, expressing a rich sweetness and creamy texture by carefully layering the sweet potatoes and allowing for slow fermentation. 590 yen.
Alcohol content: 25 degrees. Ingredients: Satsuma sweet potatoes (Kagoshima Prefecture, Kogane Sengan), rice koji (yellow koji/domestic rice). Brewed with yellow koji.
