Born in Kanagawa Prefecture in 1975. Because his family ran a sushi restaurant, he pursued a career in cooking and, with a strong belief that "if you want to learn Japanese cuisine, Kyoto is the place," he went to a Japanese restaurant in Gion. He gained experience at well-known hotels and long-established tea kaiseki and ryotei establishments, and opened his own business at age 32. His cooking style, which applies original refinements while faithfully bringing out the flavors of ingredients, and his deep aesthetic sense for tableware, including Japanese and Western antiques, have been highly praised.
