It's enjoyable to have a meal while watching the chef's skillful hands at the counter. The course is centered around Hokkaido ingredients, combining seasonal delicacies, and I feel excited while waiting for the next dish. The chawanmushi (savory egg custard) and the fish cake with bamboo shoots that came out first were comforting with their rich dashi flavor. The sashimi, including tuna and flatfish, along with the liver-dressed filefish, is interesting because you can change the flavor with ponzu or sesame oil according to your preference. The rice cooked with tiny sardines and sansho pepper, as well as the clay pot rice, were aromatic, and I couldn't put my chopsticks down until the end. Thanks to the friendly staff and the easygoing head chef, I was able to enjoy a high-quality kaiseki experience without any pretension.

In a spacious setting, I enjoyed dishes centered around local Hokkaido ingredients. Each plate was beautifully colorful, showcasing meticulous craftsmanship. The flavors were gentle yet rich, making the drinks flow easily. In particular, the sakura shrimp and sweet sea bream rice was aromatic and delicious even when cold. The soup made with cod milt and shark fin had a melt-in-your-mouth texture, and I ended up drinking the broth. The friendly hospitality of the staff was also pleasant, allowing me to relax and enjoy a luxurious time.
