Sumiya

At Sumiya, diners can enjoy sushi made with squid ink and unique black rice. On Sundays only, "Sumiya Awaji Island Nigiri Junkanzari" is offered, using fish caught on Awaji Island, and features fresh ingredients that change depending on the season and fishing. The squid ink rice is mild and tasty, and the neta is chewy yet tender with just the right amount of fatty goodness.

The interior of Sumiya is structured around a counter where customers can observe craftsmen at work up close. Another attraction is the attention to detail, such as the squid chopstick rests. Such attention to detail provides visitors with a special experience.

Opened in 2017, the sushi restaurant is run by Noriko Murakami, who has transformed herself from an ordinary housewife into a super female sushi chef. She handles everything from preparation to cooking, nigiri, and service. When she made the decision to open the restaurant, she trained at several sushi restaurants to hone her sushi skills before opening Sumiya.
