The official name for nodoguro is akamitsu. Its taste has been described as "the most delicious fish in Japan" and "the best white fish. It has been described as "the best white fish" and "the best white fish in Japan.
It is prized as a "phantom fish" because even expert fishermen cannot catch more than a few per month. It is said to be the "king of nabe" (hot pot), surpassing pufferfish and anglerfish in terms of flavor.
Fresh seafood directly from the fishing grounds of Tsushima, which boasts the largest catch in Japan, is used in this kaiseki cuisine created by Japanese artisans to match the colors of the season. The omakase dish of the day using a wide variety of fish, made possible by a direct contract with Tsushima Fisheries, is Shiroya Kitashinchi's signature menu item.

This is a lunchtime-only special course at Shiroya Kitashinchi, where you can enjoy the whole conger eel shipped directly from Tsushima, from the standard conger eel stew to sashimi and shiroyaki (grilled conger eel)! This course is made possible by a direct contract with Tsushima Fisheries, using abundant seafood and conger eel caught in nearby waters, shipped directly from Tsushima Fisheries in Nagasaki Prefecture.
This is a lunch-only course that includes Shiroya's famous "Nodoguro-meshi Chazuke". This luxurious course includes fresh conger eel sashimi, assorted seasonal tempura, and fruit, allowing you to enjoy the delicacies of Shiroya Kitashinchi. Please enjoy the fresh seafood directly shipped from Tsushima Fisheries in Nagasaki Prefecture and a variety of dishes created by Japanese artisans.
