Kikumasamune Junmai is a sake from Hyogo Prefecture, brewed by Kikumasamune Sake Brewery. It has an alcohol content of 15% and a sake meter value of plus 5, making it a dry sake. This is a classic sake from Kikumasamune, crafted using the labor-intensive 'kimoto' method. It is a genuine sake that is brewed with lactic acid bacteria sourced from nature, ensuring a well-balanced sweetness and acidity. The yeast is cultivated for about a month before the main brewing process begins. The acidity and amino acids produced through the 'kimoto' method create a strong, robust flavor with a refined and crisp umami.
