The homemade 100% buckwheat soba made from small, flavorful buckwheat flour produced in Fukui Prefecture is delicately crafted by separating the round buckwheat and the whole buckwheat. The dashi is made using Rishiri kelp and two-year-old honkarebushi, and the ingredients, such as the locally sourced spicy daikon radish, are all carefully selected from domestic sources.
