Our full-course crab menu uses one Matsuba crab per person. Matsuba Gani is different from other crabs because it is directly shipped from Tottori, the home of Matsuba Gani, and Hyogo Prefecture, where it is auctioned in the morning. We have learned from our experience that the taste of Matsuba crab is totally different depending on the area of the sea. Even for a single crabmeat, there are bitter crabmeat and sweet crabmeat. This is due to individual differences in taste, which is also related to the area of the sea. Through many years of experience, I have come to be able to tell the difference just by holding a Matsuba Crab in my hand. If you have ever disliked crabmeat because it is bitter, you will be surprised when you try Kanimatsu's crabmeat.
