The soft-shelled turtles raised in the hot springs of Oita Prefecture are characterized by their mild flavor and the rich broth they produce. They are prepared alive, simmered for a long time with plenty of sake, and then seasoned with soy sauce and ginger. The ingredients are quite simple, including daikon radish, white leeks, and tofu, all complementing the soft-shelled turtle as the main star. The final rice porridge is said to be the strongest in the hot pot cuisine.

The eel, which has fat that shines in seven colors, is cherished as a blessing from the gentle rain, having fattened in cold seawater. The eels that have grown strong from spring to summer migrate south into the Pacific Ocean for half a year in winter, and after spawning and fertilization, they receive the blessings of a preservation system ingrained since ancient times, returning to approach Japan six months later on the Kuroshio Current. As spring arrives, the juvenile fish that have settled on the sandy shores undergo metamorphosis into eels. Quietly, from summer to autumn, and then in winter, after eating plenty of food, the eels are at their fattiest. We prepare live eels sourced fresh from the market every morning. The surface is grilled to a crispy, fragrant finish, while the inside is fluffy and delicious white meat, making the perfect Anago Shira-yaki. The gentle saltiness is pleasant on the palate and pairs excellently with sake! There’s no doubt that Edomae Anago is delicious during this season! This is a proud dish of Isami, and reservations are accepted.
