We blend three types of flour from Hida, Shinshu, and Genkibiki, and knead them with natural water. The dipping sauce is made with top-grade thickly shaved bonito flakes and premium Hidaka konbu seaweed, using our original recipe.
We use local ingredients and delicious fish from Toyama, adding a twist to create our dishes. Starting from 5400 yen, our kaiseki also includes Hida beef.
