"Aburaage" is deep-fried tofu sliced thinly. In Hida Takayama, seasoned aburaage coated with a soy sauce-based sauce is called "Agezuke." Please enjoy the texture that is crispy on the outside and fluffy on the inside, with a charred finish from being grilled over fire.
・Koroimo (a dialect term from Hida meaning baby potato. It is a sweet and soy sauce-flavored stew, a traditional home-cooked dish from Hida.) ・Komodofu (a type of tofu that has bubbles, allowing it to absorb flavors more easily, providing a different taste experience compared to regular tofu.) ・Nitakumoji (a dish that has been boiled and processed twice, created as a way to enjoy pickles more deliciously.)
'Tsuke Ste' is a soul food from Hida. In the past, during the harsh winter months in Hida, there was a custom of grilling old pickles to eat. The origin comes from placing frozen pickles on a magnolia leaf and roasting them over an irori (traditional Japanese hearth).
A regional dish grilled on dried magnolia leaves, where miso is mixed with green onions and mushrooms. Magnolia leaves are relatively heat-resistant and are just the right size, making them suitable for cooking with ingredients placed on top. The aroma of the magnolia leaves and the savory scent of the charred miso create a flavor that is quite addictive.
