Owner and winemaker Pascal Cuise, who also handles sales to the global market, continues to challenge himself believing in the potential of Bergerac, and has become globally known as a producer of wonderful wines. Pascal is passionate and sometimes speaks boldly, being an open-minded person, with famous quotes such as, 'My factory is outside!', 'The moment I stop stepping into the vineyard is when I will stop making wine,' and 'We do not limit ourselves to one thing, but incorporate everything we believe is good for quality,' which have become known as 'Pascal's sayings.' The wines of Chateau de Cesar are known for their high cost-performance, not because 'the prices are low due to being a minor region,' but because they are 'constantly challenging themselves to improve quality.' They are taking on winemaking with a new perspective typical of a new generation of producers. Pascal does not deny this. This is because, like Flavi, Pascal always thinks with an open mind, judging what is necessary and what is not, while continuously evolving winemaking. Constantly thinking and not fearing change to create good products is the philosophy of Pascal and Flavi.

The term 'comoloco' translates to mad or crazy in English, indicating that this wine embodies a sense of being 'crazy in love' or 'infatuated.' It offers a bouquet of floral aromas along with the scent of ripe cherries, rich fruit flavors, and sweet exotic spices that fill the glass. On the palate, it feels fresh with well-balanced tannins that are pleasant. The vineyard is located in the northern part of Jumilla, covering an area of 40 hectares. Half of the grapes come from the estate's own vineyards, while the other half is sourced from contracted farmers. It is situated on a north-facing slope at an altitude of 700 meters. The region is influenced by a continental climate, receiving very little rainfall, with an annual precipitation of only 250mm, making it an extremely dry land. The soil is calcareous, ideal for Monastrell. Comoloco uses younger vines, aged between 25 to 30 years. The grapes are hand-harvested. Prior to fermentation, the grapes undergo a 2-day cold maceration at 8 degrees. Both fermentation and aging take place in stainless steel tanks, and the wine is lightly filtered. The award ceremony took place in Beaujolais-Renié. This organization, established after World War II, promotes the improvement, enlightenment, and dissemination of Beaujolais wine.
