Owner and winemaker Pascal Cuise, who also handles sales to the global market, continues to challenge himself believing in the potential of Bergerac, and has become globally known as a producer of wonderful wines. Pascal is passionate and sometimes speaks boldly, being an open-minded person, with famous quotes such as, 'My factory is outside!', 'The moment I stop stepping into the vineyard is when I will stop making wine,' and 'We do not limit ourselves to one thing, but incorporate everything we believe is good for quality,' which have become known as 'Pascal's sayings.' The wines of Chateau de Cesar are known for their high cost-performance, not because 'the prices are low due to being a minor region,' but because they are 'constantly challenging themselves to improve quality.' They are taking on winemaking with a new perspective typical of a new generation of producers. Pascal does not deny this. This is because, like Flavi, Pascal always thinks with an open mind, judging what is necessary and what is not, while continuously evolving winemaking. Constantly thinking and not fearing change to create good products is the philosophy of Pascal and Flavi.

[Red, Full Body] Variety: Cabernet Sauvignon. Cemental means a breed of bull used for bullfighting in Spanish, expressing masculinity and power. It has aromas of red and black fruits such as cherry, prune, and bilberry, fresh with a combination of power and volume, and has wonderful tannins. The term 'comoloco' translates to mad or crazy in English, indicating that this wine embodies a sense of being 'crazy in love' or 'infatuated.' It offers a bouquet of floral aromas along with the scent of ripe cherries, rich fruit flavors, and sweet exotic spices that fill the glass. On the palate, it feels fresh with well-balanced tannins that are pleasant. The vineyard is located in the northern part of Jumilla, covering an area of 40 hectares. Half of the grapes come from the estate's own vineyards, while the other half is sourced from contracted farmers. It is situated on a north-facing slope at an altitude of 700 meters. The region is influenced by a continental climate, receiving very little rainfall, with an annual precipitation of only 250mm, making it an extremely dry land. The soil is calcareous, ideal for Monastrell. Comoloco uses younger vines, aged between 25 to 30 years. The grapes are hand-harvested. Prior to fermentation, the grapes undergo a 2-day cold maceration at 8 degrees. Both fermentation and aging take place in stainless steel tanks, and the wine is lightly filtered. The moderate acidity and ripe fruit flavors harmonize well with the tannins. The vineyard is located at an altitude of 800 meters, in limestone soil rich in chalk. This area is influenced by a continental climate, with cold winters and very hot, dry summers, receiving over 3,000 hours of sunlight annually. In July 2025, I visited the wine holy land of Napa Valley (California). I toured four vineyards, led by Robert Mondavi. Although Robert Mondavi now leads the world, his history was not without challenges. During the tasting and explanation at ARCHARCH & TOWER, I learned about the history of his struggles and romance, and I studied the footsteps of those who came before. His philosophy extends to California wines beyond Napa.

Shouzu, the owner sommelier, has been awarded the title of 'Compagnons du Beaujolais' by the Knights of the Beaujolais Council (Le Grand Consell de L'ordre) in 2014 due to his long-standing contributions to the promotion of French wine and Beaujolais wine in Japan, as well as his achievements in fostering exchanges and mutual understanding with producers from the French region. The award ceremony took place in Beaujolais-Renié. This organization, established after World War II, promotes the improvement, enlightenment, and dissemination of Beaujolais wine. It also grants this knightly qualification to individuals who have contributed to Beaujolais wine, not only French citizens but also producers from around the world. Many notable figures are also included. He was recommended for the award by local producers in Beaujolais-Renié for his long-standing contributions to the promotion of French wine and Beaujolais wine in Japan, as well as his role as a bridge between Japan and Beaujolais through many visits over the years.

Known as the heart of German wine. The reflected light from the Rhine River flowing at the foot of the vineyards warms the fields and nurtures flavorful grapes.

[White / Dry] ◆Grape Variety: Riesling ◆Producer: Prinz Family (KA-515) This is a very full-bodied dry wine. The aroma has sweet fruit, minerals, and a lively freshness. 'Gutsriesling is the starting line, like an entrance. If you like it, you can choose the higher wines, so it's important,' Prinz says.

It is the second largest wine-producing area in Germany, following the Rheinhessen region. To the west, there is a vast forest that protects the vineyards from bad weather. It has been known for the quality of its Riesling for a long time.

This wine is made from grapes that are harvested quickly when they freeze naturally, after delaying the grape picking from December to January. It is a very rare wine that concentrates the sugars and extracts by freezing the moisture in the grapes.
