Owner and winemaker Pascal Cuise, who also handles sales to the global market, continues to challenge himself believing in the potential of Bergerac, and has become globally known as a producer of wonderful wines. Pascal is passionate and sometimes speaks boldly, being an open-minded person, with famous quotes such as, 'My factory is outside!', 'The moment I stop stepping into the vineyard is when I will stop making wine,' and 'We do not limit ourselves to one thing; we incorporate everything we believe is good for quality.' The wines of Chateau des Cesar are known for their high cost-performance, not because 'the prices are low due to being a minor region,' but because they are 'constantly challenging themselves to improve quality.' They are taking on winemaking with a new perspective typical of a new generation of producers. Pascal does not deny this. This is because, like Flavi, Pascal always thinks with an open mind, judging what is necessary and what is not, while continuously evolving winemaking. Constantly thinking and not fearing change to create good products is the philosophy of Pascal and Flavi.

It has aromas of red and black fruits such as cherry, prune, and bilberry, is fresh, combines power and volume, and has wonderful tannins. The term 'comoloco' translates to mad or crazy in English, indicating that this wine embodies a sense of being 'head over heels' or 'crazy in love.' It offers floral aromas along with the scent of ripe cherries, rich fruit flavors, and sweet exotic spices that spread throughout the glass. On the palate, it feels fresh with well-balanced tannins. The vineyard is located in the northern part of Jumilla, covering an area of 40 hectares. Half of the grapes come from the estate's own vineyards, while the other half is sourced from contracted farmers. It is situated on a north-facing slope at an altitude of 700 meters. The region is influenced by a continental climate, receiving very little rainfall, with an annual precipitation of only 250mm, making it an extremely dry land. The soil is calcareous, ideal for Monastrell. Comoloco uses relatively young vines, aged 25 to 30 years. The grapes are hand-harvested. Prior to fermentation, the grapes undergo a two-day pre-maceration at 8 degrees. Both fermentation and aging take place in stainless steel tanks, and the wine is lightly filtered. This is another wine made without added SO2 using organically grown grapes from 'Comoloco'. It has a fresh mouthfeel and is very well balanced. The moderate acidity and ripe fruit flavors harmonize well with the tannins. The vineyard is located at an altitude of 800 meters, in limestone-rich soil with a lot of chalk. This area is influenced by a continental climate, with cold winters and very hot, dry summers, receiving over 3,000 hours of sunlight annually. While Robert Mondavi now leads the world, his history was not without challenges. Shouzu's owner sommelier Ishiguro has been awarded the title of 'Compagnons du Beaujolais' by the French Beaujolais Knights Council (Le Grand Consell de L'ordre) in 2014 for his long-standing contributions to the promotion of French wine and Beaujolais wine in Japan, as well as his achievements in fostering exchanges and mutual understanding with producers from the French region. The award ceremony took place in Beaujolais-Renié. Established after World War II, this organization promotes the improvement, enlightenment, and dissemination of Beaujolais wine. It also grants this knightly qualification to individuals who have contributed to Beaujolais wine, not only French citizens but also producers from around the world. Many notable figures are also included.
