This is our signature dish, seasoned only with rock salt from freshly caught Mikawa chicken. It is grilled to a crispy exterior while remaining tender and juicy on the inside. A delicious dish that even the juices are tasty.
Enjoy Mikawa chicken with homemade garlic oil. Garlic is chopped and soaked in olive oil, mixed with herbs, and slowly simmered at ultra-low temperatures. The lava-grilled Mikawa chicken is also a must-try with its addictive flavor.
We blend five types of miso, including red miso, in our unique recipe and marinate it with Mikawa chicken thigh. This dish features a sharp spiciness from the chili and a mild richness from the egg yolk.
