We have created a flavorful tamagoyaki by adding minced chicken, mitsuba, and the umami of chicken broth. The chicken used is from Tottori Prefecture, specifically the Oyama-dori breed. The chicken meat is freshly ground upon arrival at Tsukiji Market after departing Tottori at night. This tamagoyaki features a harmonious balance of ingredients, broth, and eggs that enhance the deliciousness.
Kamaage, which is beautifully wrapped with cherry shrimp, is one of the most popular items among omelet with fillings. The secret of its deliciousness lies in the high-quality cherry shrimp from Yui in Suruga Bay, Shizuoka Prefecture. The cherry shrimp, which is boiled in a pot without coloring, is not only delicious but also has excellent color and aroma. Please enjoy the omelet with added green onions and trefoil, tightly packed with the blessings of the sea.
A first attempt as a tamagoyaki filling. We carefully selected Kishu plum with reduced saltiness and added it to the tamagoyaki. Many customers are surprised by the combination of tamagoyaki and umeboshi, but it pairs exceptionally well with matsutake mushrooms. We have combined the traditional taste with originality and ingenuity to create a refreshing and lingering deliciousness.
We mixed red pepper with a dashi different from 'matsutake' and baked it. We realized a flavor that allows you to feel sweetness at first, followed by a moderate spiciness after passing through the throat.
