A hot pot made with white miso seasoned with garlic. We added dashi to a blend of several types of white miso, resulting in a rich and flavorful soup. The aroma of garlic and sesame oil stimulates the appetite. The sweetness of fresh offal (small intestine) and the mild sweetness of Kyushu's white miso are popular among women. We recommend finishing with champon noodles, which absorb the rich soup, providing a chewy texture.
A rich Kyushu soy sauce-based hot pot. The soup, which combines a deep umami broth with a flavorful and sweet soy sauce, pairs well with high-quality domestic beef offal (small intestine) that has good fat content. The aroma of garlic and sesame oil adds a savory flavor. The soup clings well to the flavors of the ingredients like cabbage and burdock, and the spiciness of chili peppers (Takanotsume) serves as an accent.
This dish is prepared in a refined broth made from kelp, resulting in a simple and light flavor. The simplicity allows the freshness of the offal to shine.
