Among them, we carefully select only the 'most expensive cuts rich in collagen' that enhance the sweetness and umami of white miso rice malt. The offal, which has been meticulously washed in five stages to remove any odor, releases exquisite umami and sweetness every time it melts into the soup. The moment you take a bite—you're surprised by the plump, melting texture of the offal, and the gentle sweetness of the white miso spreads, enveloping you in a deep deliciousness that seeps into your very core. Truly, 'a bowl that you will never forget after tasting it once, a bowl of emotion.'
Kyoto, the capital for a thousand years. In this land where court culture, samurai culture, Buddhism, and performing arts intersect and mature, the core of the food culture has been 'Kyodashi'. Carefully extracting umami from kombu and katsuobushi, it is finished with a clear taste free of any off-flavors. Its delicacy and depth of richness embody the 'aesthetics of subtraction'. Visually light, the flavor is mellow. With just one bite, you can feel the profoundness of Kyoto.
This is a bowl that allows you to 'experience' the tradition of Kyoto. The gentle aroma of dashi and the steam of white miso. From the moment you gather around the pot, your heart slowly begins to unwind. The selected ingredient to complement the essence of Kyoto cuisine, 'dashi', is the special white miso with a history of several hundred years originating from Kyoto. You might have the image that white miso is 'sweet'. However, this white miso is different. It is not just sweet; it is a 'umami miso' that emphasizes richness and depth of flavor. Chosen from hundreds of varieties, it is truly a hidden gem of Kyoto. Elegant, mellow, and with a certain depth. It blends with the dashi and gently envelops the richness of the plump Omi beef offal. With each bite, as you surrender to the umami of the offal and the lingering taste of miso, you feel a sensation that not only satisfies your palate but also calms your heart. This lingering sensation continues until the very end. Please savor every last drop with the rice porridge or cheese risotto infused with the umami of white miso and dashi. This is not just a simple offal hot pot. It is a bowl that allows you to taste the 'culture of Kyoto' with all five senses.
Omi Takashima, Shiga Prefecture. We use naturally cultivated rice that we grow by our own hands on the shores of Lake Biwa. The traditional Japanese varieties 'Asahi' and 'Kame no O', as well as 'Isehikari', known as the 'Miracle Rice' derived from Ise Jingu. We cultivate these completely without pesticides or fertilizers, by our own hands. Experience the original umami and flavor of the rice with every bite. Please enjoy the nostalgic heart of Japan.
