There are various theories about the origin of 'hitsumabushi'. One theory suggests it was created as a meal for the staff of a restaurant, while another claims it was developed to allow everyone to share an ordered eel rice bowl fairly, as it was difficult to divide grilled eel evenly. It is also said that eating it as ochazuke (rice with tea) was convenient for staff meals, and that it was made into ochazuke to be light and easy to eat as a finishing dish at banquets. Additionally, it is thought that the use of large, sturdy containers instead of the fragile ceramic dishes used for delivery led to the creation of the hitsumabushi served in a wooden box. Hitsumabushi consists of 'a wooden box, rice bowl, clear soup, pickles, condiments, and broth'. Enjoy not only the grilled eel and rice but also try adding condiments or enjoying it as ochazuke.
