Sushi Tsumugi

We use carefully selected seasonal ingredients to offer a series of dishes tailored to the season. The sushi, enjoyable for both the eyes and the palate, is a perfect delicacy to celebrate special occasions. It pairs exceptionally well with sake and wine, enhancing the umami of the ingredients. At the counter seats, you can enjoy conversations with the chef and staff while spending a relaxing time. A homely atmosphere pervades, allowing you to feel comfort every time you visit. There are also partitioned seats where you can enjoy a leisurely time in a private space.

Opened on July 7, 2018, in Okinawa, the chef with extensive experience in Tokyo showcases his skills. After training in Akasaka, Ginza, and Tsukiji, he is building a new sushi culture in Okinawa. The challenge of the chef with a unique background is one of the reasons he is loved by the local people.

Born in Saitama Prefecture in 1986. He entered the world of sushi at 18 and has a record of winning a sushi competition. After that, he honed his skills across multiple genres including Japanese cuisine and Italian, and served as head chef at well-known Italian restaurants in Tokyo and Kanagawa. Bringing a diverse set of techniques, he became head chef when the restaurant opened in July 2018.
