Tokyo Nihonbashi Mr. Muto, the owner of Sushi Ao, opened his own restaurant in Nihonbashi in June last year. I was surprised to see this building packed with famous restaurants such as Tempura Asanuma and Yakitori Takahashi. Omakase Course Pickles Button Shrimp Sashimi of tiger globefish with ponzu (citrus juice) on the skin Abalone Hairy Crab Shinseiro Grilled swordfish Nigiri Sea bream squid Striped horse mackerel Red meat Nakatoro (medium fatty tuna) back Nakatoro, blood Small skin Red Mussel Prawns Clam Buffoon sea urchin Negitoro Temaki Anago (conger eel) Miso soup Miso soup Drinks Bottle of white wine The snacks are as good as those at Japanese restaurants. The nigiri rice is generally strong in vinegar, so there may be different tastes. I am looking forward to seeing more of his unique style.
