Summer Sake refers to a general term for seasonal Japanese sake shipped from various breweries during the summer season. There is no clear definition, but a major characteristic is that it is crafted to have a refreshing and light taste, making it enjoyable even in hot weather.
When you take a sip, a subtle sweetness gently spreads, and the aftertaste is refreshing and crisp. It is not a punchy sake, but it offers a soothing flavor that is perfect for before meals or during relaxation time. With a moderate alcohol content of 14 degrees, it still has a rich umami flavor, making it a recommended drink to enjoy well-chilled during summer evenings.
The low-protein rice 'Shunyo' is a very unique type of rice, and the sake brewed from it has a new ginjo aroma reminiscent of muscat called '4mmp'! It features fruity notes of grapefruit, pear, and lychee, along with the scent of cypress wood. It has a vibrant impression, with a refined sweetness and sharp acidity, and a hint of bitterness in the aftertaste. The balance of sweet and sour is excellent, and compared to previous years, the sake has a more robust quality. For a fresher experience, it is also recommended to mix it with soda!
It is said that there are irises in the grounds of the brewery, and every year when the flowers bloom, they beautifully color the surroundings of the brewery. This sake was named 'Ayame' with the hope that it would also beautifully color the brewery.
