After earning one Michelin star at the French bistro 'Belon' in Hong Kong, he went on to earn two Michelin stars at the Four Seasons Hotel Marunouchi Tokyo and ranked 2nd in 'Asia's 50 Best Restaurants 2023'. He has a high reputation since his time in Hong Kong, and his stability and sophisticated taste are popular.

After honing his skills in some of the world's most prestigious restaurants, he has worked as Executive Chef at SEZANNE. He served as sous chef at Per Se in New York and Épicure in Paris, and as head chef at Belon in Hong Kong, where he earned a Michelin star. Drawing on his experience, he has received high acclaim in many places for his open-minded cuisine that incorporates ingredients from different cultures.
