At Fukusuke, we are committed to using natural Indian tuna. Indian tuna (also known as Southern bluefin tuna) is a high-quality tuna on par with bluefin tuna. It is characterized by its unique aroma and higher fat content compared to bluefin tuna. The red meat (330 yen) is rich in color, vibrant, glossy, and made from finely textured fish.
The 'Plum Sea Bream' raised in the beautiful waters of Kushimoto Island in Nanki, with Kishu plum vinegar extract. Enjoy its refreshing fat, firm texture, and high-quality umami. It is also delicious when paired with plum salt.
A deep-sea fish found at depths of over 200 meters. It has a rich fat content throughout the year, but the flavor is refreshing and has a refined umami. The exquisite wrapping technique unique to specialty shops and the aroma of kombu enhance the experience. The vivid red skin is also appetizing.
