Che cosa è Japan?: Japan’s dining scene is often described as a dialogue between seasons, craftsmanship, and regional identity. From sushi, tempura, and kaiseki to ramen, yakitori, and wagashi, menus tend to highlight clarity of flavor and careful presentation. Travelers may notice distinct local styles: Hokkaido’s seafood, Tohoku’s comfort stews, Tokyo’s soba and modern interpretations, Kansai’s okonomiyaki and kushikatsu, Shikoku’s udon, Kyushu’s tonkotsu ramen, and Okinawa’s island influences. Many venues emphasize dashi, fermented seasonings such as miso and soy sauce, and precise knife work. A tradition linked to tea ceremony hospitality is said to shape the understated service and attention to detail found in many dining rooms. Street-side counters, casual izakaya, and refined multicourse experiences coexist, encouraging spontaneous tastings and planned outings alike. Seasonal specials, chef’s selections, and collaborative pop-ups appear in various neighborhoods, suggesting a food culture that balances heritage with ongoing creativity.

The best of motsu-nabe.
Personally, Fukuoka is my favorite prefecture.
Because... it is a city that is a treasure house of "food" (laughs).
Speaking of Fukuoka
Ramen, yatai (street stalls), sashimi, cod roe...
Ramen, yatai (street stalls), sashimi, cod roe... and many other specialties.
Of course, "motsunabe" is one of those specialties.
Even in Tokyo, while going out to eat nabe
I love "motsunabe" so much that it has become one of my favorite
I love this food.
Recently, the popularity of hormone and
hormone and mori are booming in popularity.
In Tokyo, "Arizuki" and "Yashou" are at the top of the list.
are at the top of the list.
But, as you would expect from a restaurant in its home town, this place is completely superior to those in Tokyo.
This place completely surpasses the Tokyo restaurants.
The food is delicious and inexpensive.
Personally, I think that the tonkotsu (pork bone) based soup here is really the best in "motsu nabe".
The tonkotsu (pork bone) based soup here is really the best.
It is a taste that is hard to find in Tokyo.
In Tokyo, there are basically
salt, miso and soy sauce.
Shoyu" is the standard in Tokyo.
But Fukuoka is the home of soy sauce!
It is different.
In the world of motsunabe
In the world of "motsunabe," it is absolutely number one.
But there is a drawback.
It is a little far from Hakata Station and the downtown area.
You can go there by train, but it might be more convenient to go there by car.
but it might be more convenient to go by car.
Also, it would be better if there were more side dishes.
But you will be very satisfied with this restaurant!

Stylish Motsu-nabe Restaurant
A trip to Fukuoka with A, my junior, for three days and two nights
Dinner on the second day
After all, you have to eat motsunabe, don't you?
We decided to go to Yamanaka.
But no way, it was closed on Tuesday!
I realized just before I went and wondered what to do!
Then, there's a branch!
I called them and they were already there!
I took a cab straight from the hotel, but the cab man
Drop me off at the back entrance of this restaurant,
I can't find the entrance!
When I opened what looked like an entrance, it was a kitchen!
I'm sorry!
I got myself together and went around to the back side...
The entrance is very stylish!
A beauty salon? It looks like a hair salon!
The store is spacious and very stylish!
I have an image of a motsu nabe restaurant as a lively, boisterous place, but
But it's not like that at all!
It's chic and relaxed in black and white.
First, a toast with Umejima and Chantigaf!
I recommend the miso flavor for the motsu nabe, so that's what I had!
Miso flavor: 1,470 yen x 2
Egg for Zosui (rice porridge) 105 yen
Negi (green onion) for Zosui (rice porridge) 105 yen
Rice 315 yen
Motsu nabe is served in its finished state.
We will add a few extra vegetables
The miso is a rich white miso base!
It is creamy with a hint of garlic!
It is rich but not sticky!
The taro is very tasty!
Noodles are often used as the main dish of motsu nabe, but this is not the case here.
But here, I decided to try Zosui (rice porridge)!
Most of the people around us had zosui, too!
Zosui is also served when it is ready!
Zosui is full of the flavor of vegetables and pork!
It is like a Japanese risotto because of the white miso paste!
It's so delicious!
I want you to eat this until the end of the meal!
The junior chef was also pleased with the taste!
But there is still half a bowl of rice porridge left!
I'm too full to eat any more.
Sudden declaration of fullness: !!!!
Usually, you don't suddenly say you are full, do you?
I ate my junior's portion too, and I'm already suffering too much!
And then, I was told by my junior to go to the restroom!
It's not good!
I opened the door and was surprised!
Original atmosphere, antique accessories
What a gap!
I'm curious about the boys, too, but I can't go in there, lol.
I don't know what kind of atmosphere the main store has,
I don't know what the atmosphere is like at the main restaurant, but the taste and atmosphere were good!
The motsu nabe is not too bad, and the additional rice porridge will fill you up!
The waitresses are all well groomed.
No wonder this is a popular restaurant!
If you go, you must make a reservation!
