This is a serving for one person. It is our proud special grade horse sashimi. Enjoy the horse sashimi with a moderate amount of marbling dipped in soy sauce mixed with ginger. The fat of the horse is not overwhelming, and we hope you can savor its refined flavor at least once. We would appreciate it if you could inform us of the number of orders when making a reservation. This dish is also included in the course, so please consider it.
Fresh horse liver, cut thickly as is characteristic of a specialty horse meat restaurant, served with sesame oil, salt, and chopped green onions. Since liver is a rare part, there is a limited supply. There are also restrictions on the number of orders, so please consult us when making a reservation.

This is the meat from under the kurai, known as shoulder loin. The fat of the horse is high quality, does not weigh you down the next day, and the meat is tender. We recommend ordering enough for the number of people.

Hitomoji refers to a type of green onion called wakegi. It is served with yuzu vinegar miso.
