Tradition and Innovation in Kagoshima Kurobuta

Shabu-shabu is a special shabu-shabu dish made with carefully selected pork ribs from Kagoshima black pigs and served with soba-tsuyu (buckwheat sauce) made with Kagoshima raw soy sauce and zarame (a type of soy sauce made from soy sauce and grains). The condiments, a blend of yuzu peel and chili peppers from Miyazaki Prefecture, are also very flavorful. The reasonably priced and healthy shabu-shabu is popular among women and customers with children, making it a casual and easy to use restaurant.
