Akayane Distillery / Kagoshima Prefecture Eiwa Town. The aroma is very complex, with scents of green sansho leaves, crushed sansho berries, and root vegetables like burdock. The taste is very sharp with a clean aftertaste.
Brewed only with barley koji from Mori no Kura in Kurume City, Fukuoka Prefecture, the droplets extracted through a method that maximizes umami are carefully aged for over 3 years in a dedicated jar. The fragrance of barley is exceptional.

Watanabe Sake Brewery conducts everything from the cultivation of the raw sweet potatoes to distillation and bottling by the brewers themselves. Even if there is a vinegar factory nearby, it doesn't matter; that is also considered part of the terroir of 'the local shochu.'
