The secret to the deliciousness of Hakata Jidori lies in its lineage. It is said to be the most delicious among domestic indigenous breeds (local chickens that have been around for a long time), combining the Shamo, a breed known for its taste, which contains a high amount of umami component inosine acid, with the meat-rich White Plymouth Rock. Typically, the withdrawal feed period is seven days before shipment, but Hakata Jidori emphasizes safety and undergoes a long-term withdrawal period of over 60 days before shipment. It features the unique chewiness of local chickens, with an increasing umami flavor as you chew, and the meat is characterized by its fine texture and crisp bite.
