A traditional soba that has been loved since the Edo period. When plenty of grilled nori is placed on warm kake soba, the nori softens and comes apart, resembling blooming flowers, which is one theory behind its name. It allows you to simply enjoy the quality of the ingredients. A dish cherished by the stylish Edo people.

It is said that during the flourishing Edo culture, the small pillars of Edo Bay were likened to 'Arare' (small rice crackers) and scattered over soba, creating the popular dish known as 'Arare Soba.' Please enjoy the 'Ten Arare' made with small pillars and shiba shrimp combined with mitsuba, served alongside the soba.

A traditional sea bream chazuke that has been passed down at the long-established restaurant 'Kachou', founded in the second year of the Showa era. This is a bowl that can be enjoyed refreshingly and elegantly as a conclusion to a splendid meal. The sashimi sea bream is served with a special sesame sauce. Additionally, we have prepared grilled sea bream with a flavorful marinade. First, enjoy it with rice. For the second serving, place the sea bream on the rice and pour the fragrant broth over it to enjoy as chazuke.
We have added a special stew that has been slowly simmered to the 'Herekatsu', which was also called 'Herekatsu' at a long-established Western-style restaurant. It is a luxurious 'tonkatsu' enjoyed with the stew as a substitute for the sauce.
