This seasonal course focuses on the fragrance of black truffles, which are now in season. The freshly shaved truffles are prepared in a way that brings out the best aroma for each dish, allowing you to enjoy the lingering aroma rather than the quantity. Chef Murata's specialty cheese risotto is also available in this course. The dish has been carefully calculated in terms of cooking, emulsification, and layering of aromas, and is finished with a layer of black truffle aroma. This course is designed to make the beauty of the aroma more accessible and enjoyable, without being bound by the stereotype of truffles as a luxury item. Yet, it is still very satisfying. We offer a course that can be enjoyed with a glass of wine without any tension, which is typical of L'atelier de l'Oto. We hope you will use our restaurant for a wide range of occasions, from daily use to anniversaries.
