Akasaka Kappo Kazushi

"Akasaka Kappo Kazushi" pursues an "evolving Japanese cuisine" that fuses traditional Japanese culinary techniques with a modern sensibility. In the omakase course, centered on seasonal ingredients, the restaurant offers innovative dishes that elevate domestically produced ostrich meat—an increasingly noted sustainable ingredient—using Japanese cooking methods. In addition to ostrich tataki, charcoal-grilled ostrich, and shigure-ni, the menu features handmade soba noodles prepared in-house and the carefully prepared first dashi stock drawn each morning, creating a unique worldview where respect for tradition and innovation coexist.

Akasaka Kappo Kazushi is a hidden kappo restaurant for adults, tucked away in a corner of a building away from the bustle of Akasaka. The interior, themed on the harmony of yin and yang, features a refined Japanese-modern design centered on black, with light-wood counters and white plaster walls. In addition to counter seats where you can enjoy the chef’s movements up close, the restaurant also offers fully private rooms, accommodating a wide range of occasions such as business entertainment, dinners, and anniversaries. In this tranquil space, you can savor the appeal of Japanese cuisine through all five senses.

「あかさか割烹和史」は、店主・濵野崇史氏が長年にわたり培ってきた日本料理の技術と経験を結集し、2025年7月に赤坂の地で開業した本格割烹店です。店名の「和史」には、“和の歴史を紡ぐ”という想いが込められており、日本料理の伝統を継承しながらも、新たな感性と価値観を取り入れた料理を追求しています。開業直後からその独創性と完成度の高さが評価され、早くも「ミシュランガイド東京2026」のセレクテッドレストランに選出されるなど、赤坂の新たな美食の舞台として注目を集めています。

店主の濵野崇史氏は、10代からミシュラン一つ星店「乃木坂 神谷」や赤坂の名店「たけがみ」で日本料理の基礎を学び、その後「築地 亀本」で魚の目利きと扱いを習得。さらにオーストラリア・メルボルンでの経験を経て、「麻布十番 可不可」副料理長、「恵比寿 今市」「神楽坂 和史」の料理長を歴任しました。2025年、修業の原点である赤坂の地で独立。「和の歴史を紡ぐ」という想いを店名に込め、伝統を守りながらも、新たな日本料理の可能性を追求し続けています
