Breaking traditional boundaries, we have lavishly increased the amount of kombu. By layering the savory flavor of roasted flying fish, we have maximized the 'rich umami' and 'luxurious thickness' to their limits. The medium-thick curly noodles, generously coated in silky kombu water, create a synergistic burst of flavor when dipped into the exquisite seafood broth. Adding 'yuzu pepper' along the way releases a refreshing aroma, making it impossible to put down your chopsticks until the very last bite.
Our restaurant's specialty! Made with grilled flying fish using Takahashi's unique method. The flavored oil is a special blend developed by Takahashi that maximizes the aroma of grilled flying fish. The noodles are custom-made in collaboration with a long-established noodle manufacturer. You can enjoy the last drop by adding white rice to the remaining soup to make grilled flying fish dashi ochazuke.

On top of warm white rice, a rich and glossy egg yolk. Accompanying this is our special grilled flying fish soy sauce, made in-house, which concentrates the umami of grilled flying fish. But that's not all. For the finishing touch, use a mill to grind a luxurious blend of ingredients like grilled flying fish. The refined depth of the broth, exquisite soy sauce, and the bursting aroma of freshly ground spices. Once you take a bite, you won't be able to stop eating this ultimate egg over rice. Enjoy!
