This is an artisanal restaurant that recreates traditional Edo-mae sushi with today's ingredients and materials. With minimal knobs and work, you can say that it is just pure "sushi" without incorporating Japanese or Western food. Rather than a gusto that hits you the moment you put it in your mouth, the more you bite into it, the more the flavor spreads. The characteristics of the dish and the appearance of the owner and the restaurant make you feel as if you are being tested, and your concentration is heightened. ◼️The origin of the store's name The owner enjoys visiting Buddhist temples, and before opening the restaurant, he visited a temple where a monk gave him a Jizo statue as an offer to open a restaurant. ◼️The Kanji character for sushi It used to be "zushi" all over Japan, but at some point in the Kanto region, the guess character "sushi" started to become popular. Both existed in China from around A.D. zero, and it is said that sushi used to mean something like shiokara, while ¡Èzushi¡É meant narezushi. In Kansai, there are still some places that use the word "sushi. The omakase (omakase) menu is priced at 15,000 yen. Two glasses of sake, one glass of ume (plum) wine, and three additional cans of sake each, 45,680 yen for two people.

There is a dignified atmosphere in the restaurant and a good sense of tension. It is truly a sushi restaurant for adults. The owner's handiwork is also excellent. The rice is soft and tender in the mouth, with a hint of sweetness from the sake lees vinegar. The sushi is only omakase. The plump conger eel is also excellent. The kohada has a wonderful luster. This is a great restaurant that I would like to revisit.
