This is a special course that includes the rare "Wagyu tongue" and "Wagyu belly", which is prepared by purchasing a whole head of "Saroma Wagyu", a brand-name beef of Hokkaido. Our 'Su Motsu' features a refreshing yuzu pepper ponzu sauce. The 'Tender Boiled Beef Tongue' is slow-cooked for 8 hours to achieve a melt-in-your-mouth texture. ~ Offal ~ <Small Intestine, Heart> We only use carefully selected fresh beef offal. The heart is a high-quality cut of lean meat. The small intestine is also plump and rich in collagen. ~ Cabbage ~ <Kanto Region> To provide the freshest possible, we use produce from the Kanto region. It is delivered to your table the day after harvest. When simmered, it enhances sweetness and brings out the overall flavor of the hot pot. ~ Garlic Chives ~ <Ibaraki and Tochigi Prefectures> Characterized by its thick texture and good flavor. It is a highly nutritious vegetable rich in vitamins A, B1, C, and carotene. Carotene, in particular, has effects such as suppressing active oxygen. ~ Burdock Root ~ <Aomori and Gunma Prefectures> Burdock grown in healthy soil is thick and crunchy. [Sweet Potato, Black Koji, Jar Fermented, 25 Degrees] Using black rice, an ancient grain, for the koji rice, and also using black koji, both the primary and secondary fermentation are done in jars. The carefully brewed shochu is slowly aged in a jar for 3 years.
