This is a rare lamb meat with a domestic consumption rate of less than 1%. We purchase whole lambs from various farms in Hokkaido. Only at Shirokuma, we offer it by each cut, including loin, tenderloin, thigh, shoulder, belly, and more.

This is an adult sheep over 24 months old. It has a rich flavor characteristic of sheep. In fact, there are few stores that handle it, making it quite hard to find!
This is a brand of sheep known as 'Roaring Forties Lamb' raised in the southern region of Victoria, Australia, located at 40 degrees south latitude, and on Tasmania Island. They are fed on grass that has been nourished by the pure sea breeze from the Antarctic continent. You can enjoy the fine texture and clear flavor of the meat.
