Yotsuya Kaedean

A long-established soba shop that has operated since the postwar period was renovated, and now offers not only soba but also multi-course meals that make use of Japanese culinary techniques. It is characterized by highly refined Japanese dishes such as appetizers that showcase seasonal ingredients, straw-grilled bonito, tempura, and menus structured to begin with soba and end with soba. Each course is composed to evoke the season, allowing diners to enjoy the aesthetic sensibility of Japanese cuisine and its delicate flavors. The menus are designed with attention not only to the quality of the ingredients and dashi broth but also to the flow of the meal and its overall balance.

The interior is a calm Japanese-style space, centered on counter seating, where a simple yet refined atmosphere can be felt. The renovated interior is arranged with careful attention to detail, offering visiting guests the serenity and comfort of Japanese cuisine. Located in Yotsuya, it provides an environment to step away from the bustle of the city center and quietly focus on the meal. A warm service style, in which conversation with the chefs and staff arises naturally, is also a feature, creating an atmosphere that values closeness with guests. Time spent leisurely waiting for the dishes while enjoying sake and soba-mae (pre-soba appetizers) becomes a pleasant connection, and the meal itself is elevated into an experience of tranquil time.

As a long-established soba shop that has continued since the postwar period, we have woven history in the Yotsuya area. While respecting the trade name and traditions of Kaede-an, beloved for many years, we have renewed our style to pursue evolution as contemporary Japanese cuisine. The fifth-generation head chef has breathed new life into the restaurant, aiming to connect the history and culture handed down in Yotsuya to the next generation. While striving to evolve as a Japanese restaurant, we also cherish the commitment to preserving soba, dashi, and traditional flavors unchanged and incorporating them into our courses.

Fifth-generation owner Keisuke Yamada was born and raised in a family that ran a traditional soba shop and is a highly skilled chef who trained at renowned Japanese restaurants. He began his path as a cook while at university, learned technique and spirit at famous Japanese restaurants in Kagurazaka and Roppongi, and has experience as a head chef. He has a deep understanding not only of the foundations of Japanese cuisine but also of hospitality and overall restaurant management, and he leads the shop with an approach that blends tradition and innovation. As the fifth-generation owner he values the perspective of "not only preserving tradition but evolving it," and has renewed the shop name to Yotsuya Kaedean to show his ambition for a new era.
