Shabu-shabu, which is said to have derived its name from the way ingredients are briefly swished in hot water to cook them lightly. Since it only involves dipping in hot water, it is a dish that allows you to truly savor the inherent flavors of the ingredients, making it a dish that cannot be masked. Therefore, we pay meticulous attention to the quality, management, and aging of the meat. 'Aging' is a very important process that determines the quality of the meat. Thanks to techniques developed over many years, we provide meat that maximizes all aspects of deliciousness, including texture, color, marbling, and fat content. The sesame sauce is carefully roasted and ground by hand to ensure that the umami and flavor of the sesame are preserved, resulting in a taste that is not overly sweet and does not become monotonous, thus not compromising the original flavor of the meat.
