This course includes all-you-can-drink sake from popular breweries, delicious sake from selected brands, and homemade sofrito. (We have over 65 different types of various favorites. For details, please see the all-you-can-drink menu green) Delicious ingredients from Nihonbashi, a sacred place for food, delicious dishes from all over Japan associated with "Nihonbashi," the starting point of the Five Streets, small dishes of seasonal ingredients, small dishes of special ingredients, and "Taste Japanese food culture" as the theme, we will serve reprinted reproduced dishes and home cooking based on recipes from the Meiji era.
This course includes seasonal recommendations using seasonal ingredients, special small dishes, popular large sake snacks that can be shared, and delicious ingredients from all over Japan, named after "Nihonbashi," the starting point of the Five Routes. Beverages may be selected freely from the beverage menu.

It is not too dry, with a subtle sweetness, featuring a balanced mix of acidity and sweetness. Recommended as a food pairing sake that goes well with any dish. Made with Gohyakumangoku rice.
Niigata/Aoki Sake Brewery/Sake Meter Value +0.5/Acidity 1.4/Polishing Ratio 55% This sake has a fragrant ginjo aroma reminiscent of green apples, while being refreshing yet firmly highlighting its inherent umami, resulting in a refined taste. It is said that 'one cannot speak of sake without Kakurei,' reflecting its esteemed reputation among locals. Made with Koshitanrei rice.

Yamanashi / Yamanashi Meijo / Sake Meter Value +1 / Acidity 1.6 / Polishing Ratio 47% A sake brewed with the water from the famous water town of Hakushu. It pairs well with food. The fruity aroma typical of Daiginjo is somewhat restrained, resulting in a clean and refreshing mouthfeel. It goes well with light dishes and ingredients with bitterness. Uses Yumizansui.
Yamagata / Kato Yoshihachiro Sake Brewery / Sake Meter Value -6.5 to -7.5 / Acidity 1.6 to 1.7 / Rice Polishing Ratio 60% This sake was created in response to the request for a drink with a bit more richness when enjoying Western cuisine. It pairs well with meat dishes, enhancing the umami of the rice. Made with Haenuki rice.

Yamaguchi / Asahi Shuzo / Sake Meter Value Not Disclosed / Acidity Not Disclosed / Polishing Ratio 45% This sparkling sake, 'Dassai', is achieved by bottling the cloudy sake during fermentation. It has a subtle sweetness and a refreshing, crisp aftertaste from the carbonation, while retaining the floral aroma and sharpness unique to Junmai Daiginjo Nigori, making it the champagne of the sake world. Recommended for those who are not fond of sake or trying sake for the first time. Made with Yamada Nishiki rice.
