Sushi Shiina

Opened in November 2022 in Chiyoda, Tokyo. Despite being new, it has established itself as a beloved sushi restaurant known for its luxury and craftsmanship, deeply rooted in the community. Since its opening, it has gained a reputation for high-quality ingredients and meticulous work, providing a special experience for its visitors.

Born in 1961 in Ibaraki Prefecture. After graduating from junior high school he entered the world of sushi, trained in Gion, Kyoto, and then moved to Tokyo. A veteran craftsman who honed his skills at top restaurants such as the Imperial Hotel “Sushigen”, the sushi restaurant inside the Grand Pacific Meridien in Daiba, and Ginza “Sushidokoro Jun” has been standing in the kitchen as head chef since the restaurant opened in November 2022.
